Thanks to your generous contribution, over the past few weeks we were able to hit the ground running with summer research here at the Tufts Food Lab. Once more, a huge THANK YOU to our 31 donors who helped us raise $2,269 to support this brand new initiative!
Here is a glimpse at our work so far: > In collaboration with one of our WA partners, Skagit Valley Malting, we are taking a closer look at the potential nutritional and functional benefits of sprouted wheat at the Tufts HNRCA lab.
> Looking ahead to Fall 2018, we are developing a course pilot where experts and key industry players will engage with students across the university to tackle common food system challenges.
> We will be presenting at the 2018 Grain Gathering on tools and strategies that can be used to evaluate a growing regional grain economy.

While we've been keeping busy preparing a variety of research and field projects for the summer, we wanted to take a moment to share a recent Friedman Sprout article that features our reflections on a recent trip to the Skagit Valley where we connected with Dr. Stephen Jones and his team at the WSU Bread Lab. During our visit, we explored firsthand the regional grain economy that has grown in the area as a result of their work. The article provides a glimpse into future endeavors that will be made possible using funds raised through this campaign.
